Glenglassaugh Evolution is created by maturing the whisky in a unique combination of the finest hand-picked ex-Tennessee first-fill whiskey barrels. This expression shows great depth of character and finesse, a harmonious combination of whisky and oak. Bottled at 50%, natural colour and non chill filtered, Evolution represents the heart of Glenglassaugh's distinctive personality, and indeed the landscape in which it is set.

Aromas of dark berry and blackcurrant are balanced, liquorice and cardamom spice. The palate is medium in weight with ripe berry fruit and sweet spices of nutmeg and cinnamon and a subtle peppery finish.

At Glenglassaugh, in addition to the traditional production, we also produce a very limited quantity of whisky using richly peated malted barley as the cereal varietal. The malted barley has been dried in the traditional way, over peat infused kilns, giving the whisky its unique smoky flavour. Glenglassaugh 'Torfa', with its peaty, phenolic nature, is a unique expression, and is quite different to the usual style of whisky produced in the Highlands.

Next, they mature it in bourbon and sherry casks for 12 years, transforming it into a mouth-watering odyssey bursting with rich spiciness and sun-drenched sweetness. To create it, Glenmorangie take the delicate, fruity spirit of their giraffe-high stills and age it in American oak bourbon casks along with casks that once held Sauternes sweet white wine. The outcome is like a silky dessert-filled daydream of white chocolate swirled with lemon cream, crème caramel, almond croissants... all balanced by a soft drumbeat of spice. To create it, Glenmorangie gather the silky, fruity spirit from their giraffe-high stills and let it steep in American oak casks. No less than 15 years later, they transfer a portion into Oloroso sherry casks for three more years. Once 18 years have passed, Glenmorangie reunite them to create its warm balance of sweet, floral lushness. This is a wonderfully rich and complex single malt. Opening with rich and spicy aromas of crème brulee, heather honey and crumbled cinnamon, intensely fruity notes follow - fresh pineapple dressed with a scattering of sun-kissed lemon zest. There's a hint of freshly-baked sponge cake too, warm from the oven, and you'll find cinnamon again, but toasted shards this time. Citrus and vanilla notes linger in the aromatic waves of peat smoke.
